Blue Tomatoes or sometimes referred to as purple tomatoes, are tomatoes that have been bred to produce high levels of anthocyanins, a class of pigments responsible for the blue and purple colours of many fruits including blueberries, blackberries and chokeberries. Anthocyanins have been suggested to have health benefits because of their antioxidant properties. Some of these tomatoes have been commercialized under the names "Indigo Rose" and "Sunblack".

Special Precautions of Blue Tomato

In the case of Indigo Rose, the anthocyanins are found in the skin only, not the flesh. Therefore, the anthocyanin content is lower than other darker fruits such as blueberries, blackberries, and cherries. Since the pigment of the tomato is water soluble, it’s best to eat them raw since it can easily disappear when it’s cooked.
